Banana Bread

Banana bread always reminds me of my nana. When I was very little, I remember excitedly racing up her steps, smelling the caramelized bananas as soon as I rushed in the front door. No one can find my nana’s original recipe which is frustrating and so sad! What I do have though, is a recipe of my own that I know would make her smile and say, “Oooh Jenny, this is delicious”. 

Makes 1 loaf

  • 1 1/4 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 2 Eggs, room temperature
  • 1/2 teaspoon Vanilla Extract
  • 1 Vanilla Bean, seeds removed
  • 1/2 cup Butter (2 sticks), softened
  • 1 cup Sugar
  • 4 Bananas, frozen and thawed

Preheat the oven to 350 degrees. Line a loaf pan with parchment paper then spray with cooking oil. In a medium bowl, whisk together the flour, salt and baking soda.

With a mixer, cream the butter and sugar until light and fluffy. Add the two eggs, vanilla extract and vanilla seeds into the mixer. Whisk in the thawed bananas (the mixutre may look curdled). With a spatula, fold in the flour mixture until incorporated. Transfer the batter into the prepared pan and bake for 50-65 minutes.

*Don’t waste the Vanilla Bean, stick the pod into your sugar jar after you remove the seeds.
